We present the Guamanian bami nassi recipe from Latin cuisine. A combination of spaghetti and white chicken with a very delicious taste. Enjoy!!
Marinade the chicken
Marinate the chicken for at least for 1 hour. With 1 tablespoon of thick soy sauce and 2 tablespoon light soy sauce, 1 tablespoon peanut oil.
And you season with a 1 good tablespoon sugar, 1 squeezed lemon, 1 grated piece of ginger (1 to 2 cm cube), 1 medium onion, thinly sliced and 1 cube of crumbled chicken broth.

Make the bami nassi broth
Brown 3 tablespoons oil, 6 tablespoons thick soy sauce and 2 tablespoon sugar in a saucepan. Then add a spoonful or two more if you see that the syrup is hard to take with 1 cube of chicken broth, the juice of a lime, the large onion with the chopped shallots. Season with garlic and the rest of the grated ginger.
Once the syrup is well infused with ginger, lime and garlic, onion and shallot preparation, the salty soy sauce is well balanced against the sugar and it has thickened enough. Remove the pan from the heat and pass the Chinese preparation or, failing that, through a colander with fine openings. Collect the syrup which will be added to the spaghetti in the rest of the recipe. (do not discard the filtrate from the preparation, we will also use it later)

Cooking the bami nassi
Cook the spaghetti until they are al dente, that is to say firm (be careful I did not say crunchy), rinse with cold water to stop cooking and peel them off and then set aside .
In a frying pan, brown the chicken preparation with its marinade (you can also add a tablespoon of the preparation that was left in the Chinese previously). Be careful not to overcook the chicken so that it is not too dry then set aside.
In a large saucepan or Dutch oven, heat the spaghetti over medium heat and stir in the syrup until they are all soaked. Then add the chicken and its juice and stir everything for 2/3 minutes over low heat.
You can replace soy sauce depends on your palates . And you can add cheese as dressing the dish.
