Start by washing the galic cloves and onions, cut the onions into small pieces and crush the garlic. After that, wash and peel your tomatoes well and cut it into small pieces to facilatate the next operation. Leave a little crushed tomatoes to the bologne sauce step.

To insure a great taste of the plate you need a smooth tomato puree. Start by pouring a little olive oil in a sauce pan on a medium heat and put onions and garlic. When the Onions get browned pour the cutted tomatoes and stir well.
After a little while pour the vegetables broth on the tomato puree and stir occasionally. Season and mix.

Cook the bolognese sauce
Heat the olive oil in a casserole dish. Add the minced meat and onion. Fry them over high heat, mashing the meat occasionally with a fork.
When you notice that the meat juice has evaporated enough, add the garlic, carrot, celery, chili or chili flakes, herbs and bay leaf. Season with a pinch of salt and pepper according to your taste. Mix everything well.
Pour the tomato puree previously diluted in the broth and the crushed tomatoes. Sprinkle with sugar. Bring to a boil, then lower the heat and simmer half covered, over medium-low heat for about 35 minutes. The sauce should thicken and reduce. But if it is not thick, reduce it over high heat and uncovered. There should not be too much liquid so it does not harm your bolognese spaghetti dish.
Optionally, towards the end of the cooking, add the basil and mix. Remove the bay leaf.
