Seasoning and cooking the Chicken breast
First thing we do is to season the chicken breasts in a dish with all spices, garlic, pepper, salt, ginger, chili, lime, soy sauce, oyster sauce, and finish with sesame oil. Then marinate at least 30 minutes.
Heat the wok with a little oil, when the fire is strong add chicken breasts.
When they are golden brown (do not overcook them) remove them and reserve them with some of their cooking juices.
Making the sauce
Wash the wok and put it back in the oven with hot oil and pour the onions and peppers. To blow them up.
When they become tender, add the tomato purée, pepper and coconut milk. Put 1 tablespoon of curry.
Put the chicken breasts well and add some chicken cooking liquid and simmer for about 10 to 15 minutes.
