For chocolate lovers, we present you the chocolate mousse , a magical combination with hazelnuts that will blow your palates. Enjoy !!
Prepare the ingredients
Pour the oil of toasted hazelnuts with the chocolate cut into pieces in a saucepan. Put on ultra low heat so that the oil becomes lukewarm and then allow the chocolate to melt in it.
Separate the egg whites from one side with a pinch of salt. On the other side pour the egg yolks with the sweeteners. For sweeteners if you have an icing sugar version it’s even better.
Melting the chocolate
whisk the egg whites until stiff.
Then always with the same mixer (no need to clean) beat the yolks with the sweeteners. Indeed the mixture should become very pale yellow.
To insure a good taste of your chocolate mousse, check that the chocolate is well melted in the hazelnut oil. Pour the chocolate / oil mixture into the yolk / sweetener mixture. Then mix the two with a mixer.

Create the chocolate mousse
Then pour half of the whites into the chocolate mixture etc. and mix. Finally pour the chocolate mixture into the rest of the whites and stir in gently lifting the whites.
Chill for at least 2-3 hours. This gives at the end a foam that is close to a cake, both dense, melting and terribly scented with chocolate.
