Preparation mode:
Here is the Tunisian Chorba {شوربة} which is a vermicelli soup, well flavored with spices such as turmeric, ginger and paprika. The addition of wild mint gives it a very good taste.
A traditional Tunisian soup and very easy to make. It is an ideal soup when it is cold, or when you have a cold (especially if you like it hot!) Many variations are possible.
Prepare the chorba condiments
First of all, peel and roughly cut the vegetables.
In a casserole dish brown the meat previously cut into small pieces with oil.
Then, add the chopped onions and the tomatoes and let them cook.
Add the spices (turmeric, ginger, paprika, salt and pepper).
Add the vegetables, celery (branches and leaves) and coriander.
Cooking steps
Add the chickpeas (since I use canned chickpeas I add them at the end of cooking). Pour the water (about 1L to 1.5L) and bring to the boil for 20 min.
Add the tomato puree and another liter of water. Close the casserole dish and cook.
Once the meat and vegetables are cooked through, pass the chorba through a colander to collect the broth.

Remove the carrots, zucchini, turnip, celery, meat and put the rest with the broth. Pass what you got at the vegetable mill.
Then, bring everything to a boil and add the bunch of mint. Adjust seasoning.
Soup Final Steps
Add the angel hair while stirring without reducing the heat. Angel hair cooks very quickly, it takes about 10 min.

If the chorba is liquid enough add angel hair and if on the contrary a little thick add a little water (depending on people’s taste). This dish is usually accompanied with Tuna Brik specially in Ramadan.
Finally, remove from fire. Return the pieces of meat to the soup.

Many variations are possible depending on the food available in your fridge: instead of celery, you can put peas, artichoke hearts in small pieces, small pieces of turnip, and leeks, ... beef meatballs instead of lamb. Vary the pleasures!
