In this recipe, we are going to show you one of the easiest and most simple ways to create a delicious Eggplant with Cod dish at home.
Cooking the fish
Preheat your oven to 200 degrees.
Wash the eggplant and wipe it, put it on a plate and then put it in the oven. It will take about 30 minutes to be cooked (tender when you plant a knife) by turning it once. When you have returned the eggplant, start steaming the cod.
In a regular size bowl, mix lime juice and tahini.
Finely chop the garlic and add it to the mixture then season with salt and pepper.
Cutting the fish
Remove the eggplant from the oven, cut off the end, remove the skin and cut it in 4 pieces to cool as it is burning.
Once it is warm, cut each piece in half, add to the mixture and stir until the sauce reaches a thick and homogeneous sauce.
