The African culinary gives us a new pastry method to make pancakes. We present you the Cod pancakes, a tasty combination between salty and sweet taste.
Preparation of the ingredients
Soak the cod for 24 hours in cold water, changing the water several times, then poach (cook in water) for about 20 minutes until the flesh is tender.
Drain the cod and let it cool.
Shred the flesh and remove all the bones and skins, put them in a bowl or a bowl. I used vegetables of different colors to make pretty cod pancakes.
Wash half a red pepper and half a green pepper and cut them into very small cubes. Peel a red onion and finely chop it.

Make the cod pancakes mixture

Cook the cod fish pancakes
To make well-sized patties I cooked it in a small blini pan until they were browned on one side. My pancakes are 10 cm in diameter for a thickness of 2 cm, this gave 8.
Then I finished cooking in a larger pan which could contain two patties to shorten the cooking time. The patties are cooked when they are browned on both sides. Serve with a sauce to your liking.
You can add cheese to your pancakes if you want another flavors .
