There is many Tunisian specialty from Djerba the most famous one is Djerbian rice (or rouz jerbi). It is a recipe based on seafood or meat accompanied by many vegetables, and prepared with spices and garlic. The special feature of this recipe is to be steamed in a couscous. It is a complete dish since it is composed of starchy foods, meat and vegetables.
Begin preparing the vegetables: chop the onion and parsley, crush the garlic, cut the spinach stems and chop them, cut the potatoes into medium cubes.
Cut carrots and tomatoes into small cubes.
Cooking the djerbian rice
Cut the chicken breast into cubes about 3 cm.
In a large skillet with oil, cook onion until transparent and add chicken. Make it come back a few moments then add the garlic, the tomato and the tomato concentrate.
Mix, add the spices, then mix again.
Add the parsley.
Cook chicken for about 5 minutes over medium heat.
