Cooking the meat of duck hamburger
Degrease the duck breasts and chop them with a large grill or knife. Cut the semi-cooked liver into small dice. Peel and chop the shallots.
In a saucepan, brown them with the butter, without coloring. Then mix them with the duck breast and the diced foie gras, after that add the capers and diced pickles, chopped parsley, season with salt and pepper.
Forming the shape of the meat
With this preparation, form 6 round steaks using a cookie cutter. If you don’t have a cookie cutter use your hand to make the shape of hamburger meat. focus on the edges!!
Let it cool, to insure the result after cooking it !!
Preparation of the tartar sauce
In a bowl, put the egg yolk, mustard and vinegar, then season with a pinch of salt and pepper.Drizzle the oil to make a mayonnaise.
Chop the capers, pickles and herbs, then mix them with mayonnaise. Brown the buns cutted in half under the broiler.
Making the duck hamburger layers
Cut the tomato and onions into rings, chop the lettuce. Cut the raw foie gras into slices, quickly fry them in a hot pan, then set it aside. In the rendered fat, cook the duck steaks 5 to 6 min.
On the toasted bread, spread a layer of tartar sauce, a little lettuce, tomato and onion, and the chopped peppers. Put 1 steak, then 1 slice of foie gras and finally the bread lid. Hold with a wooden spike. Serve immediately
