A cookie dough safe for health!
OK, my friends, today is the day when your life is about to change. I mean, yes we all ate cookie dough. And most likely, we all bought raw dough from the fun little shops popping up all over the place … but today I’m showing you how to make 100% edible cookie dough at home.
Honestly, I have never been sick from eating raw cookie dough before baking my batch of but I mean, I know salmonella and e. coli are real things in the world. So today, let’s get food poisoning off the table. I give you permission not to cook the dough. No more life on the edge when it comes to cookie dough. I mean if you were worried about that sort of thing.
Why is raw cookie dough safe to eat?
You may know that it’s not just raw eggs that are a potential danger, raw flour isn’t either!
Can you eat raw flour?
The answer is “at your own risk”. Like I said, I have eaten raw cookies all my life without a problem. But here’s the deal, one time is enough and I’m not ready to ruin the cookie dough with food poisoning! Flour is a raw agricultural product and has not been treated to kill bacteria. The Center for Disease Control (CDC) says that raw flour can carry germs such as E. Coli, which can make you sick.
Can you eat raw eggs?
Raw eggs can potentially carry Salmonella. According to the American Egg Board, only 1 in 20,000 eggs is actually contaminated, but in reality, why risk it if you have another alternative. You can use pasteurized eggs if you are used to it, as they are heated to about 140 ° F for about 3.5 minutes, which is enough to kill the bacteria, but not enough to cook them. But again, we are talking about how to make cookie dough without eggs today, so there is no reason to use them in this recipe!
How to prepare flour safely for eating?
Here’s the cool part! Making flour free from bacteria is incredibly easy! I am even told that they sell heat treated flour, so if you find that you can skip this step! But let me tell you how easy it is!
How to heat treat (pasteurize) flour in the microwave
This is the method I use most often and which includes the steps described in the recipe sheet below. It’s super simple!
- Place the flour in a microwave-safe bowl.
- Heat at maximum power in increments of 20 seconds, mixing well to avoid lumps and uneven cooking.
- Using a food thermometer, repeat this process until the flour temperature is 160 ° F.
How to heat flour in the oven
If you want to heat larger quantities of flour, baking it may be an easier method!
- Preheat the oven to 350 ° F. Line a large baking sheet with parchment paper or a silicone mat.
- Distribute the flour evenly on the prepared baking sheet.
- Bake the flour for 5-10 minutes, until the temperature reaches 160 ° F.
Tips for making an extra delicious raw cookie dough!
I mean, it’s not that cookie dough NEEDS any additional help, but if you’re really looking to make the most of your time, I have a few secrets!
Brown the butter ! This is the method I use in my recipe and I tell you it is worth spending the extra time. Browned butter has so much more flavor than butter alone. Milk turns brown when heated, creating a rich nutty flavor. As you don’t bake the cookies, you lose the caramel flavor that occurs when the sugars cook. But browning the butter really comes in for that! Do it!
You can try raisin cookies.
Salted butter . I mean, I always use salted butter in my cookies, so it’s not new to me, but I don’t add any extra salt to this recipe, and salted butter really comes in for that!
Vanilla extract. Use Pure Vanilla when making this edible cookie dough. You will taste it, and it makes a difference.
Brown and white sugar . The combination of the two is perfection in the chocolate chip cookie dough, so you have to do it here! If you feel extra, go ahead and use all the brown sugar !!
Instructions
In a small saucepan, melt the butter over medium heat. Once the butter is melted, continue to cook the butter, constantly stirring the pan. The butter will start to boil and foam. Continue cooking until it turns orange. Remove from the heat and allow it to cool for at least 20 minutes.
While the butter cools, place the flour in a large microwave-safe bowl. Heat the flour every 30 seconds, whisking after each baking, until a thermometer inserted in the flour reaches 160 ° F.
When your butter has cooled, stir in the brown sugar and granulated sugar to the flour until well blended.
