Today, we give you another vegan recpie of hamburger. The eggplant hamburger with its simplicity , is a very delicious and easy to make meal !!
Cooking the eggplant
Preheat the oven to 200 ° C (th.6).
Wash the eggplants and cut them into 8 fairly thick slices. Place them on a non-stick baking sheet, season with salt, pepper, then brush them with oil and put in the oven for about 15 minutes, turning the vegetables halfway through cooking. Keep warm.
Preparing the condiments
Meanwhile, rinse the tomato and cut it into rings. Peel and chop the onion. Last and not least rinse and wring the arugula.
Lightly whisk the eggs with a little salt and pepper. Melt the butter in a saucepan placed in a double boiler, pour the eggs and cook them in a scramble while mixing. Keep warm.
Making eggplant hamburger
Shape 4 steaks with the minced meat using cookie cutter, and cook them on a very hot grill 2 to 3 min on each side. Add salt and pepper.

Assemble the hamburgers. Divide the scrambled eggs over 4 eggplant rings.
Top with minced steak, then 1 slice of tomato, onion and arugula. Close with an eggplant slice and serve immediately.
The sauce does not requires a specific type, you can use mayonnaise , ketchup or tomato sauce.
