Preparation of the condiments
Start by cutting the beef into small pieces. Then wash and peel the onion, garlic and thyme leaves. cut the tomato into small pieces.
In a pot put the meat and the chicken, (Chicken is optional) . Then season with the minced onion, chopped garlic, thyme leaves, curry powder and the bouillon cube. That’s the right seasoning method of the egusi
Cooking the combination of meats
Cover with enough water (about 2 cups) and cook theh mix for 30 minutes. The perfect cooking time is when you notice that the meat is almost tender.
Then add the dried or smoked fish to the pot. Cook for 10 min and set aside.

Cooking the vegetables to make sauce
In another pot, heat the palm oil and add the remaining onion, with the mashed tomato and concentrated tomato and cook for about 15 min.
After a few minutes add the ground crayfish and chili powder, fry them for a few minutes.
Creating the egusi soup
In a bowl of water, add the egusi powder and mix well to obtain a paste.
Pour the Egusi dough into the sauce and sauté for 10 minutes over very low heat. Then add the cooked meat (meat, chicken and fish) into the pan and cook for 15 min.
Finally, add the spinach leaves and salt according to your taste.
The advantage of Egusi soup is that you can prepare it with your favorite meat ( chicken, beef, pork ...)
