To make this fish hamburger recipe, start by preparing all the ingredients as shown. Set about making the cream first, then keep on following this steps to get a delicious cheese and fish combination.
Preparation of white sauce
First pour 2 tablespoons of cottage cheese into a container then add 1 tablespoon of fresh cream (or any other thick cream). Add the Dijon mustard as well as the ground cumin.
On the other hand, finely chop the parsley and chives and add these herbs to the sauce. Season with fine salt and Espelette pepper.
Peel the shallots and place them in a small blender so as to obtain finely chopped shallots. Be careful not to make it a puree.
Last and not least add the chopped shallots to the container with the sauce, and mix carefully with a whisk, until the preparation becomes homogeneous. Taste the mixture in order to correct the seasoning and have a good taste of you fish hamburger.
The right breading technique
Break two eggs in a bowl and season with sweet paprika of fine salt, and Espelette pepper, then beat the eggs into an omelet with a fork.
In a food tray, prepare the breading which will be made of corn flakes, which you will break between your hands to obtain a coarse breadcrumbs.
Season the cod fillets on both sides with fine salt and Espelette pepper.

Cooking the Cod fish
Put a non-stick pan to heat and add 8 to 10 cl of olive oil.
Carefully place the pieces of fish in the hot pan. Cook gently and return halfway through cooking to brown the other side. Be careful if the oil is too hot, the coating may color too quickly!
When the fish is browned on both sides, it is not fully cooked, it must therefore be placed on a baking sheet with stainless steel grid and finish cooking the fish in an oven preheated to 150 ° C for 10 minutes.
Filling the fish hamburger
Cut the burger buns in half using a bread knife. When making these breads, sprinkle them with sesame seeds roasted with dried bonito.
Place the base of the burger buns in the hot non-stick pan, with a drizzle of olive oil so that they sleep. Do the same with the lids of these burger buns.
When the burger buns are hot, brush the base of the bread with white herb sauce and spread it well with the back of the spoon.
Place a little arugula on the just spread sauce then place the breaded fish on the arugula and finally add to the hot fish, a cheddar slice which will melt on contact.
Place a bunch of arugula on each slice of cheese again.
Dressing the fish hamburger
Spread the back of the lids of the burger buns with white herb sauce.
Then gently place the lids to close the burgers, making them hold with bamboo sticks on which you will have put a cherry tomato for decoration. Serve immediately, accompanied by fries.
As to the fresh cream and cheese , it's not a limited choice, you can use whatever you have in your kitchen.
