Head to Tunisia with this recipe of fricassee, which are nothing but fried buns and often garnished with a potato mixture cut into cubes, olives, tuna and boiled eggs. There is also a mixture of grilled peppers.
Prepare the dough
Start by activating the yeast in ½ cup warm water (not hot) with added sugar.
Let it foam about 15 minutes.
In a bowl mix the flour and salt.
Add the yeast and the rest of warm water little by little while kneading the dough.
When the dough begins to pick up add the oil. Knead a few minutes and form a ball.

Prepare the Fricassee filling
Cut the boiled potatoes in boiling water and add salt.
Cut the green olives into slices.
Cut the boiled eggs into a slice.
Mix Harissa with mayonnaise.
Incise the fricasses, spread the harissa sauce.
Add the filling: potato, tuna, eggs and green olives.
Garnish with a black olive and enjoy.
