Preparation mode:
One of the most principal elements in the Moroccan tourism is the legendary Green tea, especially when it comes to the mint taste . Here’s the simple and best method to make it at home.
How to rinse the green tea
Pour a glass of water into a saucepan and bring to a boil. Put the green tea in a teapot , then when the water is boiled , slosh it on the tea to remove the excess tannin that gives a bitter taste tea. Let it rinse for 1 minute before removing the water.
In the same saucepan pour 1.5 liters of water and simmer on medium heat (do not boil). Meanwhile, wash the mint leaves and cut the stems.
Once the water starts quivering, pour it into the teapot and let simmer for a few minutes over low heat.

Adding mint and pacifier
Add the pacifier and mint leaves in the teapot, turn off the heat and cover it. I recommend you to dip the mint leaves in the bottom of the teapot. It should not be cooked , we seek to maintain the aromas not to loose it.
Now mix everything without using a spoon. There is a very simple way of pouring tea into a glass and then pouring it back into the teapot. Repeat the process several times to oxygenate the tea and give it the chance to develop its fragrance.

Oxygenate the tea
Let infuse about 5 minutes.
Serving
Serve hot tea in a small glasses provided for this purpose. To froth the tea, serve the teapot well high above the glass .
Enjoy your drink!
Footnotes:
When pouring the tea in cups , put the teapot upside the cup about a metre and slosh it smoothly ,.
The morrocan always use mint in the green tea, but you can add many other ingredients to make special taste and aromas, such as cinnamon, Lemon, Orange, or you can spread almonds, hazelnuts ...
