Preparation of the condiments
Open a can of chickpeas and rinse it under water until it no longer foams.
To start this hummus tamarind cooking; pour the chickpeas in a blender then add the juice of a squeezed lemon.
Cut the potatoes lengthwise (chips) into fine pieces. in bowl full of cold water, put the potatoes chips in and leave it for few minutes. Then remove it and put it on a sheet to drain them. Salt and pepper before frying .

Preparing the condiments
Mixing the hummus
Add two good teaspoons of tamarind paste (you can find this paste either in organic shops or in Asian grocery stores)
Then put a large tablespoon of tahini paste, with two tablespoons of extra virgin olive oil, and a half teaspoon of garlic powder or a clove of grated garlic,
And finally a level teaspoon of grated ginger.
Start the blender by adding 5 tablespoons of water until you get a homogeneous paste.

Pour into a bowl, make a well in the center to pour a little olive oil and serve with cilantro fluff. I used good chips as an accompaniment to dip in this hummus.
You can also dip pita, more traditional but less crisp!
