Preparation mode:
A delicious and tasty recipe for iced nougat with honey and dried fruit, this is the time of year when I usually make desserts and cookies to the delight of my family.
The dried fruits are macerated in rum which I replaced with orange juice, for the holidays the frozen nougat replaced the log, we can simply present it to end a good dinner with friends.
A fresh and fragrant dessert ideal during the holidays.
Prepare dried fruits
If you use whole pistachios cut them in half and whole almonds in four in order to have the same size of dried fruits.
Do the same for the apricots if you use them cut into small pieces.
Place the raisins and dried apricots in a bowl and pour the orange juice. Film and let macerate for about 1 hour.
Heat a pan and add the pistachios and almonds to dry roast, be careful not to grill them.
Add 40 g of sugar and let the sugar melt and caramelize over medium heat so that the caramel does not burn.
Coat the dried fruit with caramel and pour everything onto a baking sheet lined with parchment paper. Let cool before separating the pieces by hand.
Prepare the whipped cream
In a saucepan, pour the remaining 40 g of sugar and the honey. Melt everything and place a thermometer.
Whisk the egg whites until the temperature of the honey reaches 117 C (small ball) pour very slowly, lowering the speed of the mixer (do not pour on the walls or on the mixer).
Increase the speed of the mixer until the meringue has completely cooled. We should get a firm and shiny meringue.
Then whip the whipped cream in the freezer for a few minutes as well as the beaters.
Using a spatula, gently fold the whipped cream into the meringue.
Gently stir in the dried fruits (almonds and pistachios) as well as the fruits (raisins and dried apricots, drained).
Pour into a mold previously covered with cling film if it is metal (I used a plastic mold I did not need to cover it with stretch film).
Cover the surface with cling film and place in the freezer for at least 12 hours.
Iced Nougat final steps
In order to unmold the ice nougat perfectly, pass a damp, warm cloth over the entire outline, the ice will be easily demolded.
Serve sprinkling with coulis if desired.

For the quantity of dried fruit go to everyone's taste you do not have to add all the dried fruit you can make this iced nougat with pistachios, almonds and raisins only.
