Preparation mode:
We took a trip to the depth of the African cuisine to bring you this tasty rice with mushrooms called jollof rice. A complete meal which please all palates.
Preparations of the condiments
Start by chopping a large onion finely.
Wash the button mushrooms thoroughly, removing the earthy stalk. Cut the mushrooms into thin slices and then in half when they are large.
Peel, wash and cut two beautiful carrots into small cubes. Then wash and cut a long green pepper into very small pieces, don’t forget to remove the seeds and the stem.
Wash the rice with plenty of water in a fine colander.

Preparations of the condiments
Making the jollof rice mixture
Pour two tablespoons of peanut oil (or neutral oil) in a frying pan or like here in a wok. Once the onion is tender pour a can of tomatoes peeled in the juice and natural which represents about 4 tomatoes peeled (peeled) and diced.
Pour the diced carrots, diced green pepper, a large teaspoon of grated ginger and a bay leaf into a plate. Seaon the mixture with a teaspoon of salt.
Put the chopped onion on low heat and stir from time to time while preparing the rest of the recipe. They have to become soft.
Add a good tablespoon of tomato puree to the jollof mixture.
Add a quarter (100 ml) of coconut milk, mix and cook over medium heat and reduce until it becomes a kind of compact dough. Turn often so that it does not tie.
When the sauce has reduced, pour everything that has been brought together on a plate: salt, carrots, chilli and bay leaf in the sauce.
Mix everything well.

Pour the sliced mushrooms and rice into the wok.
Add the rest of the coconut milk, mix, put on ultra low heat and covered until the rice has become very tender and it has absorbed all the liquid. This is where you have to be very careful so that the rice does not stick; you must often stir the preparation. A rice which is delicious hot accompanied by a green salad.

Instead of using the tomato can , you can use 4 pieces of peeled tomatoes in the preparations .
And you can use the Basmati rice if you want to.
