The lebanese tabbouleh is basically a salad, so to prepare it, simply mix all ingredients and season with a good extra virgin olive oil and a touch of lemon. It’s that simple. We will let it sit a bit and it’s ready to serve.
Preparing the vegetables
Cook the bulgur according to the manufacturer’s instructions. Let cool.
Wash the parsley and mint and dry them well. Remove the stems and chop the leaves.
Wash the tomatoes well. Cut them in half horizontally and empty the pulp and seeds. Cut into small pieces. Peel the onion and cut it into small pieces.
Optionally, you can use cucumber. Wash it well and cut it into pieces the same size as the tomato. It can be peeled beforehand if desired.
Combining the condiments
In a large bowl, combine the tomato, cooked bulgur, onion and cucumber. Season with salt and pepper and mix well.
Add the chopped parsley and the mint and the juice of a half squeezed lemon and olive oil.
Mix well your Lebanese tabboulleh. Taste and adjust the seasoning if necessary.
