Leche Flan is a dessert cream topped with a layer of caramel, as opposed to crème brûlée. The dish can be enjoyed all over the world.
Prepare the milk and eggs
First of all, bring the milk to a boil. Preheat the oven th.6 (180 ° C).
In a bowl, beat the egg yolks, gradually add the powdered sugar and grated lemon zest. Whisk then always add while whisking the boiling milk gently.
Prepare the leche flan caramel
Make a caramel with the sugar cubes soaked in water. As soon as it is blond, pour it into a mold, spreading it over all the walls. Pour the cream into the mold.

Then, place the mold in a double boiler and bake for 35 to 40 minutes in the oven.
Check the cooking by pricking a knife point in the middle of the cream, it should come out dry. Finally let it cool in the fridge.
For a less sweet version, use regular milk in place of evaporated milk. While you can eat the leche flan warm from the oven, it is best served chilled. Store any leftovers in the fridge in an airtight container for up to three days.
