We took a trip to Swahili coast to bring you this sweet mandazi cake recipe. A Tanzanian doughnuts with coconut flavor will blow your palates. Enjoy !!
Preparation of the dough elements
Mix the yeast with 4 tablespoons of warm water (around 33˚C). Set aside for 5 minutes.
Mix the beaten egg, coconut milk, butter and sugar and. Blend well. Combine flour, cayenne pepper and the mixed spices.
Creating the main dough of the mandazi
In the bowl of the food processor or in a large kneading pan, place the flour and spice mixture.
Dig a well in the center and put the yeast in it. Gently, add the coconut milk, butter, egg and the sugar mixture.
Finally pour some lukewarm water little by little, until a homogeneous and smooth paste is obtained.
Kneading the mandazi dough
As soon as the ingredients are well mixed and the dough starts to get more volume, knead for about 5 minutes, at medium speed.
In case of hand kneading, as soon as the ingredients are mixed and the dough has taken its shape, transfer it to a flat and floured surface and knead for 10 minutes.
Put the dough in a large container, cover it and let it stand and rise for 45 minutes in a place protected from drafts.
Forming the mandazi shape
Divide the dough into equal balls and, using the rolling pin, flatten the balls into a round and thick shape of 1 cm.
Using a sharp knife or cookie cutter, divide the dough into triangles or in the shape of traditional donuts (small circles pierced in the center).
Place each donuts as you go on a floured surface. Cover and let stand 10 minutes.

Cooking the mandouzi doghnuts
Heat the oil over medium-high heat and fry the mandazi until golden brown.
Remove and place on paper towels or a metal colander to remove excess oil. Sprinkle with caster or icing sugar.
Serve it immediately hot after frying.
Decorate your mandazi cake with icing sugar on top !
