This recipe is dedicated to tart lovers. The melktert is basically a milk tart with vanilla taste and it’s very famous in south african pastry recipes.

In a salad bowl beat together 3 egg yolks, 80 g sugar and the vanilla extract.
Blend well. And when the mixture has whitened, add the sifted cornstarch.

In a saucepan, heat the milk with the butter. When boiling, cut the heat under the milk.

Pour a ladle of milk over the egg sugar cornstarch mixture as if you were making a pastry cream, so as not to surprise the eggs.
Add the milk as you go. Whisk the mixture well and let it cool.
