Preparation mode:
Mint chocolate chip is an ice cream flavor composed of ice cream with small mint chocolate chips. In most cases peppermint or spearmint flavoring is used.
Prepare the ingredients
Wash the mint, peel it.
Bring the milk and cream to a boil in a saucepan and put the mint leaves to infuse.
Boil for 5 minutes, taking care that it does not overflow.
Remove from heat and let cool.
Wait 2 hours for the infusion, at least: an entire night in the refrigerator would be perfect.
Pass the milk through the skimmer and remove the mint leaves.
Put this milk to cool in a saucepan over low heat.
Meanwhile, separate the whites from the egg yolks.

Prepare mint cream mixture
First mix the yolks with 100g of sugar and whiten the mixture with a whisk in a bowl.
Pour the warm milk over the yolks and mix well.
Put the mixture back in the pan and put back on low heat so that the appliance reduces slowly.
Wait until the mixture coats the spoon, otherwise it is more dense and less liquid.
Always mix over low heat for about 10 minutes.
Remove from heat and let cool.
Beat the egg whites and add them to the cold preparation.
Place this mixture in a turbine or ice cream maker.
Mint ice cream final steps
After 10 minutes of cycle, add the chocolate chips (the best is to reduce them as much as possible) and let the mixture set, count between 20 and 30 minutes of cycle.
Wait 2 hours before tasting.

For those who do not have chocolate chips, we opt for grated chocolate. For those who do not have an ice cream maker or a turbine, place the mixture directly in the freezer. After 30 minutes you will add the chocolate chips, making sure to mix them with the cream.
