The Omek Houria recipe is a well-known Tunisian recipe which literally means your mom (Omek) the fairy (Houria).
On a spicy basis, this carrot recipe is a childhood memory that we used to savor by calling it the carrot salad of “your mother who stings (nt)” because of the harissa which gives to this dish all its power.
Even today, follower of this very particular version of Omek Houria, I suggest you here to share with you the recipe of my childhood, simple and unlike other variants, lighter recipe of this carrot salad… spicy.
There are several variations of this Tunisian recipe from Omek Houria (or Ommek Houria) but only one from “your mother who stings”!
The personal version that I offer is tasty when it is prepared as a family with the children who will then remember their efforts (in particular to crush the carrots) and the irreplaceable flavors of the carrot of mom who stings!
In those 7 steps this salad will delight your taste buds.
Carrots preparation and cooking
At first , peel the carrots then cut them into not too thin slices.
In a second step , in a large saucepan, immerse the carrot slices in about 1/2 liter of water and bring to the boil until the carrots become tender.
Then at the end of 20-25 minutes, the cooking finished, drain the carrots. Crush them coarsely with a fork.
Omek houria Spices preparation
In the next step , peel the garlic cloves and mash them.
In the fifth step , delicate and essential, mix the garlic with the crushed pieces of carrots.
The sixth and penultimate step brings the powerful character of this spicy recipe since you will add the harissa (at your convenience) and the teaspoon of caraway (Kawaria). You will take the time to mix well.

Attention: we advise you to crush the carrots with a fork rather than a mixer, their slightly crunchy consistency by the small pieces will be better than mashed.
Decoration and carrot salad final steps
In the seventh and last step , you add 2 to 3 spoons of olive oil and a big pinch of salt. If you are a purist your salad is ready to be served chilled.
If you wish you can add a spoonful of vinegar or fresh lemon juice which goes very well with carrots. Personally we prefer the version without addition.

This spicy carrot salad can be served as an aperitif on small canapes of fresh bread accompanied by a few green and black olives. I also suggest serving it with a fish as a main course. It will be refreshing and don't forget to share it with the children who will enjoy tasting it as much as preparing it.
