The pad thai is a traditional Thai dish based on fried rice noodle, here is the easy recipe to make a delicious pad thai like in Thailand. you can use chicken or shrimps in the cooking of the recipe. Today we choose the chicken to combine it with fish sauce to create a great taste. Enjoy
Preparation of the condiments
In a large bowl filled with warm water, immerse the rice noodles and let them hydrate for 15 to 25 minutes.
In another bowl, combine the chicken with the fish sauce, paprika, cane sugar and shallots. Leave to marinate for 5 minutes.

Cooking the chicken
In a large non-stick skillet over medium-high heat, brown the chicken in 2 tbsp of the oil until cooked through. Watch out for splashes. Add three quarters of the leek and continue cooking for 1 minute. Reserve in a large warm bowl.
In the same skillet, over medium-high heat, cook the eggs in 30 ml (2 tbsp.) Of the oil, breaking them with a wooden spoon until they are are well gilded. Salt and pepper. Transfer to the bowl.

In a third bowl, combine the water, lime juice, cane sugar, fish sauce and Sriracha sauce. Reserve.
In the same pan, soften the garlic in the oil. Add the paprika and continue cooking for 30 seconds. Using tongs, add the just drained noodles and coat well. Quickly add the sauce and continue cooking, stirring the noodles constantly until al dente. Add the chicken, egg and tofu mixture. Mix well.
