Preparation mode:
This salad is a real drug for some Thais, the mixture of peppers with green papaya , lemon juice and the rest of the ingredients has a very tonic effect. Som Tam is a very spicy salad prepared with green papaya slices crushed with fish sauce, lemon juice and many chilli pepper !
Prepare the papaya
Peel and cut the papaya in half lengthwise, remove the seeds with a spoon, then rinse with clean water and dry thoroughly. (do not discard the seeds, see link under the recipe).

Paste preparation
Grate the papaya and carrot in a thin slice and set aside.
Pierce peppers and garlic in a large pestle until the consistency of a paste is reached.
Add the papaya and carrot.
Mix and serve Som tam salad
Mix sugar, fish sauce and lime juice and stir in the mixture.
Pile one last time by mixing the ingredients well.
Cut the tomatoes in half and incorporate by turning the som tam salad.
Stir in the previously pounded peanuts. Mix well.
Footnotes:
The dish is ready, you can serve it with Chinese cabbage and other crisp vegetables (it calms the heat of the pepper) and glutinous rice.
If you are a little sick, Som Tam will act like a grog on microbes, it can even give you energy if you have a hangover!
