Cook the quinoa
Start by rinsing the raw quinoa for a long time under a stream of water to remove the bitterness. Then cook it 4 times in its volume of salted water for about 20 minutes.
Then rinse it again under a stream of cold water. Drain well and reserve.

Make quinoa-couscous mixture
Meanwhile, pour the spelled couscous in a salad bowl.
Add the hot tomato sauce and the same volume of boiling water. Mix and let stand so that the beans swell well and the mixture cools.
Pour the prepared quinoa over the couscous and mix everything well until it gets comined. Season with a pinch of salt and pepper. Adjust in salt.

Season the quinoa salad
After making the mixture, now we prepare the vegetable to add more flavors in seasoning. Start by washing the coriander and chives under cold water to remove dirt and excess.
Then chop half a bunch of washed fresh coriander and half a bunch of washed chives as well.
Pour the herbs into the salad and mix again. Distribute the preparation well in a large dish ( rather to be a flat dish ).
Wash and cut a beautiful tomato into small dices and spread them over the top of the salad. And finally sprinkle with some pieces of feta.

Finally arrange randomly some spoons of good Greek yogurt on top (optional) and add a little tomato sauce on top. Garnish with cilantro leaves. If you don’t have yogurt you can use heavy cream instead.
Keep cool until ready to serve.
