The day before preparing
First wash the chickpeas, put them in a saucepan, cover them with water and let them soak overnight.
First drain the chickpeas, put them in the bowl of your thermomix.
Then add flour, onion cut in half, garlic, parsley, cumin, a pinch of salt, paprika, water and yeast.
Then mix everything for 35 seconds at speed 9, scrape with the spatula and mix again for 20 seconds at speed 9 … let stand 30 minutes in the bowl.
Make dumplings with your chickpea paste then heat the oil in a frying pan.
Brown your felafel dumplings and put them on paper towels.
Sean’s Falafel cucumber sauce
Wash the bowl of your thermomix then put the cucumber in pieces with a pinch of salt.
Then mix for 4 seconds on speed 6.
Drain the cucumber to release the liquid, put the parsley and garlic in the bowl then mix for 4 seconds on speed 8.
After add the drained cucumber, yogurt, oil, lemon juice, a pinch of salt and pepper then mix for 15 seconds on speed 3.
Serve your meatballs with a lettuce leaf, tomato slices then coat with the cucumber sauce.
