Today we give you the shrimp turnovers or “Rissois de camarão” from the portuguese cuisine . It’s a a very delicious fried breaded shrimps.
Preparing the dough
Pour the water in a saucepan with the margarine, the lemon zest and the salt. Bring to a boil. The mix the sifted flour and put on low heat. Mix continuously. When the dough becomes compact and curls, remove from the heat. On a smooth, lightly floured work surface , flatten the dough with the palm of your hand while tapping. Flatten it a few mm thick (5 maximum).
Creating shrimps stuffing
Melt the margarine in a saucepan. Add the sifted flour and stir, adding a little water, to obtain a thick cream. Drizzle with lemon juice. Stir in the egg yolks and season with salt and pepper. When the cream is set, remove from the heat and allow to cool slightly. Add the canned shrimp (you can use whole fresh shrimp, you just have to peel them and cut them into pieces). Mix well.
Stuffing the shrimp turnovers
on the rolled out dough, cut out dough circles with a cookie cutter to make the donuts. With a spoon, place in each round a little stuffing (not too much, otherwise during cooking the donuts will burst). Close the donut and stick the edges well. Pass the donuts through the beaten eggs into an omelet then in the breadcrumbs and fry in hot peanut oil. Turn them over during cooking. When they are nicely browned , remove them and place them on absorbent paper.

Dressing and serving your shrimp turnovers
Finally, wait a bit before tasting. As an aperitif or as a starter with salad, these donuts can be enjoyed hot (be careful not to burn yourself) or cold. They can even be eaten cold the next day. Enjoy your meal !
