The shrimps tagliatelle with mushrooms and cheese combination, is one of my favorite pasta recipe ever. A delicious meal will blow your palates!
Prepare the pasta
Bring the water to a boil, salt and add the tagliatelle according to the package directions.

Cook the Mushrooms
While the pasta cooks, heat 1 tbsp olive oil in a deep skillet.
Put half of the minced garlic and fry for about 30 seconds. Add the onion or shallot and fry until it is tender.
Add the sliced mushrooms and fry, stirring occasionally, until the mushrooms have turned a nice brown color.
Transfer the mushrooms to a plate and set aside.
Fry the shrimps
In the same pan, add the remaining oil and add the shrimp and cook until they become opaque and sprinkle with Espelette pepper (if you like), paprika and salt.
Cook for about 3 minutes, taking care to stir from time to time to insure great taste of the shrimp tagliatelle. Remove from the stove and reserve on the same plate as the mushrooms.
Make the white sauce
Pour the milk and the creamy cream cheese into the pan and rub the bottom of the pan this will extract the juice and this is what gives the good taste to the sauce.
Continue mixing until the cheese becomes creamy (there will be lumps but don’t worry).
Simmer for another 5 minutes and add the Parmesan cheese (you can also replace half with mozzarella cheese) and let everything melt.
Adjust the salt seasoning.
Cook the Shrimps tagliatelle
Add the shrimps and mushrooms mixture to the sauce and stir the mixture to incorporate everything. Leave on low heat for about 2 minutes.
At this stage the tagliatelle is well cooked. Reserve 120 ml of cooking water. Drain the tagliatelle and rinse it.
Pour the reserved but not whole pasta cooking water, start with 60 ml until you obtain the desired creamy consistency.
Garnish with chopped parsley and serve.
You can replace the tagliatelle pasta with spaghetti . You will get the same taste
For the cheese , you are free to choose if you want to use one sort of cheese (mozzarella or parmesan) or both. Depends on your palates !
