Today we present you the stuffed tomatoes with sardines recipe. A nigerian dish that combines seafood and vegetables in a delicious plate.
Preparations of the condiments
Cut a small strip of tomato in the bottom to give stability to the tomato, cut a hat and hollow it out, keeping the pulp from the inside.
Place the hollowed out and lightly salted tomatoes upside down on a plate to remove the excess moisture.
Creating the stuffed tomatoes mixture
In a bowl, put the tomato pulp and the tomato caps stripped of the peduncle and cut into small cubes and cut the boiled eggs into very small pieces.
Then add the can of sardines to the oil but without the oil. It is not in the recipe but for my part I added a spoon of chili puree.
Finely chop an onion and add it to the bowl. Here a very sweet red onion.
Serving the stuffed tomatoes
Finally pour two tablespoons of mayonnaise. Mix and salt to taste. All that remains is to turn the tomatoes over and stuff them with this preparation. Serve chilled with a good crispbread is a real delight!
Serve with a little pre cooked rice and tomato sauce.
