Preparation of vegetables :
Peel and cut the potatoes into thin slices. Then cut the onion into thin strips. Pour olive oil in a pan on high heat. Put the chopped onion in the pan and toast it for 3 minutes, stirring very well, until translucent.
Place the potato slices in the pan, add olive oil again.
Cook and Season
Season with salt and pepper to taste, then reduce the heat over low heat and cook for 5 to 10 minutes, with a lid stirring occasionally. In this moment our potato slices will be cooked .

Prepare the tortilla
Meanwhile, whisk eggs in omelette, in a bowl, spread Espelette pepper and paprika and mix. cut the Serrano ham into slices and add it to the the recipe. When the potato slices are ready, place them into a salad bowl. pour the beaten eggs. Salt and pepper. blend it finely.
Finishes and serve
Put back in the pan and cook on low heat for 5 to 10 minutes. Once the upper side is gold enough, turn the tortilla on a plate. Slide the tortilla, to get the other side browned as gold. When the tortilla is ready, warm it out of the heat before serving.
