Every region of Turkey, but also of Armenia or the Middle East has its own way of doing its Pizza Pide. The dough remains mostly the same, but the fillings vary. The topping that I use remains my way of preparing it, you can according to the taste of each vary the ingredients and the spices. So here is the recipe!
Prepare the ingredients
Dissolve yeast in warm milk (not hot) and let it foam.
Pour the flour into a bowl and add the salt and sugar and mix.
Add the egg and the oil and the yeast.
Knead the dough until you get a smooth and elastic dough. If the dough sticks do not hesitate to add more flour.
Grease a salad bowl with olive oil and place the dough. Cover with plastic film and tea towel. Allow the dough to double.
Preparing the Garnish
In the meantime prepare the garnish of the pizza pide.
Heat a skillet over medium heat, and melt the butter, add the chopped onion and sauté until translucent.
Add garlic and sauté 1 minute.
Add the minced meat and separate it with a fork.
Season with pepper and add the cumin. Out of the fire add the Sumac spice (if you have it bring a very good taste). Pour the mixture into a salad bowl and let cool.
Add chopped parsley, chopped mint and lemon juice. Mix the ingredients well and set aside.
Forming and cooking the Pizza Pide
Preheat the oven to 200 C (400 F).
Degas the dough and cut it in half (this way you will have 2 large pizza if not 4 for medium pizza).
Shape the dough into a ball and spread it in an oval shape.
Transfer the dough to a baking sheet lined with parchment paper.
Sprinkle the surface if desired with starch to prevent moisture.
Place half of the minced meat garnish, add the tomatoes and the grated cheese.
Close the edges of the pizza by forming a sort of boat by sealing the ends well to prevent the dough from opening during cooking.
Brush the beaten egg rims and pour a little egg on the surface of the filling with a spoon.
Do the same for the rest of the dough.
Bake and cut
Bake for about 25 minutes or until golden brown.
At the end of the oven cut the pizza in half lengthwise and then horizontally.
Serve Pizza Pide hot.
You can add an egg in the center of the Turkish pide pizza for me I had brushed the outline of the pizza and I poured on the surface the remaining beaten egg. One can choose individual versions or like me Large Format.
